Looking for good chili verde recipes

Anyone have a good chili verde recipe they'd like to share? Preferably pork-based. I tried two different recipes last winter--one from the interwebs, and one from a Santa Fe cookbook. Both were pretty pedestrian.
 
It's not the best thing EVER, but HEB sells a green chile stew mix that comes in a jar and only requires you to brown pork. It's awfully easy. I understand the difference, but that's all I've got for you. I've never made chile verde from scratch.
 
This is the Bye Week family stand-by green chili recipe, heavily borrowing from the recipe from Cafe Pasqual's in Santa Fe, but modified to our taste over the years. Hope you try and enjoy:

Heat 1/4 cup olive oil in 6-8 quart dutch oven or cooking pot. Add: 1 yellow onion (diced), 1 white onion (diced), 6 cloves garlic (pressed or minced), 4 stalks celery (halved and diced), 4 carrots (peeled and diced), and 1 green bell pepper (seeded and chopped). Saute until vegetables are tender, 5-10 minutes.

Cut 2-pound pork butt in half, and add to pot/dutch oven along with 1 TBSP ground cumin, 1 TBSP Mexican oregano, and 3 quarts chicken stock. Bring to a good rolling boil for a few mionutes, and then skim/spoon off any foam/oil on top. Reduce heat to low and simmer uncovered until pork is tender, 2-3 hours. Add chicken or beef stock periodically during this time period if too much liquid has evaporated.

Transfer meat to a chopping block/plate. Skim any oil or foam on top of stock. Coarsely chop/shred pork and return to pot. Add 2 cups corn (preferably grilled/roasted), 2 cups diced green chilis (preferably grilled/roasted), 2 pounds diced potatoes, and 1 additional quart of stock. Cook 30-45 minutes, until potatoes are tender. Salt and pepper to taste, and add additional dash of cumin and Mexican oregano. Enjoy.

P.S. Smoked chicken thighs are a great substitute for pork in this recipe. I have heard that turkey is a good sustitute as well, but I haven't tried that yet...

cook pork
put green chile salsa on pork 3-5 mins before done,

Serve with beans and spanish rice.
 
Made this chicken chile recipe, but could easily substitute pork. I’m a pressure cooker guy and you should be, too.

3 lbs bone in skin on thighs
3 poblanos
4 tomatillos
2 Anaheim or cubanelle peppers
1 Serrano
1 onion
6 pressed garlic cloves
Salt
Cumin
