Famous TX foods, etc

I haven't lived in TX for 15 years now, so I'm having trouble remembering which famous brands of food/drinks/candy originated in TX.
I'm trying to find something for a goodie bag that has a little Texas flair to it. Other than Blue Bell ice cream, what are some other things that originated there?

Wick Fowler's 2 alarm chili mix is a Texas concoction. Collin St. Bakery fruitcakes and pecan pies are really good, if a little pricy. I'm pretty sure the pecan millionaire has Texas origins.

Neely's Brown Pigs in Marshall Texas, used to be the best Catfish was at Big Pines Lodge on Caddo Lake. Proprietor was a Longhorns alum named George Williamson, had big poster behind the cash register he had made up of a picture with James Street and George flashing the Hook em' when James came home to Longview one time and visited the lake. New York seems to have discovered that Texas BBQ is good

Lived in NY State for 3 years. Dinosaur BBQ (Syracuse and now Brooklyn) is on par with some of our better BBQs.

NY and Texas (along with our surrounding states) are the 2 places that seem to eat a lot of beef brisket. NY has a growing number of Texas-style BBQs now (like Dinosaur BBQ), but most of their brisket eating comes from the Jewish tradition where brisket is often boiled rather than smoked and served with gravy, mustard, or nothing. Brisket comes from the front part of the cow (chest), and my understanding is that only the front part of a side of beef can be certified kosher. That's probably why brisket has always been such a popular cut of beef in NY. This is probably also why they're embracing Texas-style BBQ brisket so enthusiastically (that and it's good taste).

Spent a year in SC--pork was about the only BBQ they did there... Nothing wrong with that, but you long for smoked brisket after a number of months without it.
