OK I’m in charge of Christmas Eve Brisket. I’ve eaten truckloads of it and now I’m doing it myself. I have a green egg. I found some trimmed brisket at HEB that is high quality. I know 200 F low and slow. Looking for some coordinators for my brisket. I lack experience making it not eating it! Thank You in advance!

I like moist brisket and not dry. For maximum tenderness/juciness I brine mine in Dr Pepper or Coke (not diet, need the sugar) for 48-72 hours. Rub the night before and let it go the next morning. I typically smoke at 225. After 6-7 hours wrap in aluminum foil for the remainder of the cook. I actually started putting it in the oven at 225 in the foil because having it on smoke does no good at that point and it makes my life much easier. I feel like I'm cheating, but whatever. When it's done I leave it wrapped and put it in a cooler for a couple hours to allow the meat to let the juices render throughout the meat.

I did the Dr Pepper Brine for 69 hours and then 6 hours with the rub. It’s been on the grill an 1:20. Holding the temp under 225 F has been tough, but so far so good.

It was great. Lots of left overs. I got up at 4:30 AM and stayed up until 11:30 PM last night with it but the brisket is fork tender, good bark and flavor. My Beagle absolutely loves watching me smoke brisket! I’m real tired tonight, think I’ll go to bed early!

Glad it all worked out! I'm a big fan of moist brisket and since I started doing the brine I've never had anything go wrong.

I made another Brisket in April but it was only an 8 lb. Brisket. I burned it due to only going by the meat thermometer. Tomorrow I’m picking out my meat and trying again to make a great Brisket for Fathers Day. Any suggestions would be appreciated. And Happy Father's Day to all you Dad’s!
 
How did you burn it? Aren't
those Green Eggs set it and forget it? 225-250 degrees. Shouldn't burn unless the smoker temp gets too high.
 
User error. I only went by the meat thermometer and did not pre calculate how much time per lb. On the grill. We salvaged half of it. Think I’ll soak in Dr Pepper again and know ahead of time about how long I’ll cook it so I don’t have to rely 100% on the meat thermometer.
 
Per Aaron Franklin another great trick to make sure you don’t overcook a brisket is put a bowl or can of water on the grill with the brisket. I did that this time. Keeping everything simple like Aaron Franklin. We’re at 9 hrs 40 min so far!

Right off the Grill. I only put foil on it after taking it off the grill. I did NOT wrap it on the grill.

Ready to eat. We fed 7 and lots of leftovers. Think I'll bring some over to the Police station. Those poor guys have been through a lot!

Do you have a Mac or Windows PC? If Windows maybe someone here can chime in on what they use for resizing photos.

For a Mac, do as @horninchicago said and:

1) Airdrop the photo to your computer
2) Double-click the photo to open it in the Preview app
3) In Preview, click the Tools menu, then click Adjust Size...
4) In the Width box enter anything from 600 to 800 (assuming it is higher than that) to get it to a manageable size
5) Save the photo and upload

This keeps the pic from being huge and it will fit into a post.
 
I did the air drop and saved it with my player pictures for the 100 days thread, it worked.
